πŸ˜ŠπŸ’•πŸ˜Š About a week ago, I was blessed by my daughter’s act of kindness when she said she’d be fixing some delicious blueberry muffins. I love sweet treats and was delighted to partake! She even fixed enough that we were able to enjoy them for a few days! These muffins were also vegan and gluten free. She’s been vegan for a few years and tries to also avoid gluten. I enjoy eating her creative and tasty vegan meals. I have also become a healthier eater because of her. I’ll definitely miss her cooking when she heads to Spain next month. See her muffins below, they were sooo good! πŸ˜‹ πŸ‘πŸΏ

      1. I tried it whenever she is home and cook it. She made a vegan mac and cheese and it was very good. My son liked it as well. I don’t know if I can give up oxtail, curry mutton and pig tail. I can give up chicken and beef if I have to. 😊

      2. Lol! I like my daughter’s vegan Mac and Cheese too. I don’t think I can completely give up fish. I don’t care for beef either. Chicken I rarely eat now. Are you from the Caribbean?

      3. Hi Dawn. Yes, I am a Jamaican but I live in the British Virgin Islands for the past 19 years also. I also love fish and I love an occasional steak as a treat. I guess we have a lot in common? How about you, do you have caribbean roots?

      4. Yes we do have a lot in common, especially our love for Christ. It’s always a blessing to meet another sister in Christ. No I don’t have family in the Caribbean. I just recognized some of the foods you mentioned as Caribbean foods. I live in Florida and have many Jamaican coworkers. We celebrated Jamaican Independence Day a couple of weeks ago at work. Very delicious foods!
